Cranberry Pumpkin Walnut Spread


The coming of the fall season seems to always bring this sense of optimism and possibility. Maybe it’s the transition happening around us – the changing colors of the leaves, the humid summer days giving way to chilly fall mornings.

At this time last year I was embarking on this food blogging adventure and now I’ve decided to take another jump, into a new job. Guess I have a thing for starting up new things in the fall…

Amid the career changing, freelance work, and soccer playing, cooking has been a bit hard to make time for lately. But now that I’m settled in the new gig and used to my daily schedule, its time to whip out my butternut squash recipes, pumpkin soup, fall roasts and hot spicy beverages.

I have said this before but I’ll say it again, I love fall cooking. Roasted root vegetables, thick hearty stews, an excuse to make anything with pumpkin in it, how could you not enjoy the seasonal food?


I’ve dropped the ball on posting fall recipes and cooking, but plan on making up for that in the next few days. But to get those fall recipe juices going, I wanted to let you in on an AMAZING fall pumpkin dip.

At a recent fall gathering, my friend and chief vegetarian consultant, Alyson, brought this insanely delicious pumpkin dip that had everyone in the room congregated to that corner. The minute someone tried the dip, they told a friend, that friend told a friend, and soon word spread of this  addictively scrumptious concoction.

Pumpkin, cranberry, walnuts and greek yogurt cream cheese come together to give this dip a unique and nutty rich flavor. Served with crackers and apple slices, it is the perfect treat ahead of your next fall meal.


Cranberry Pumpkin Walnut Spread 

8 oz. Greek cream cheese (can find in local grocery, a combination of Greek yogurt and cream cheese)

1 cup dried cranberries; plus  a tablespoon for garnish

3/4 cup toasted walnuts; plus a little for garnish

1/2 cup pumpkin puree, plus an extra spoonful (Alyson likes her pumpkin)

1 tsp. cinnamon

1/4 tsp. allspice

Pretty simple. Mix the cream cheese and pumpkin, add in the rest of the ingredients and serve with apple slices and crackers.
