You’ve carved your pumpkin into exactly what you imagined (?!) and now you are left with a pile of pumpkin guts and seeds. Need not fret my little goblins, here is a delicious and easy way to make those seeds into a glorious snack.
Spicy Pumpkin Seeds
pumpkin seeds, cleaned off and pumpkin removed
Preheat your oven to 400F. Bring about 2 cups of water, salt and the pumpkin seeds to a boil in a saucepan. Once the boil starts, bring the heat down to low and simmer for 10 minutes.
Line a baking sheet with aluminum foil and spray with cooking spray.
Drain the seeds in a colander and lightly towel off. Place the seeds on the baking sheet and drizzle with a touch of olive oil. Now, here is where its up to you and your love of spice. I give a generous shake of each over the seeds : garlic powder, chili powder and cumin. The paprika I gave about two shakes around but if you like things really spicy, feel free to add more.
Toss everything with your hands to coat and then bake the seeds for about 15 minutes. **Keep an eye on the seeds after 10 minutes, because the smaller your pumpkin, the smaller your seeds and the less time they will take, and vise versa.
Let the seeds cool before serving.
